Just raise local levies on one of your rally point. Raising local levies = Less levies raised = less army maintenance and your men at arms will be raised quicker. You don't have to raise your entire army in one rally point. Also, raising your entire army in one rally point splits them up to different armies depending on supply.

The character that creates the holy order doesnt get a trait for them or the family, something shared for all dynasty members like a permanent holy warrior or an event chain. Not even becoming a saint especially the patron saint of the order. Just a money sink unless they are germanic and there to protect your captial while you are raiding
